Your yeast is active.letting dough do its thing on counter overnight then form and bake.of salt to the melted butter and brush the melted butter all over the loaf, top, sides, and bottom for a softer crust.

If the dough is too wet then probably not.But i've been succesful with relatively high hydration doughs (even when retarding them overnight in the fridge enclosed in a plastic bag--plenty of opportunity for the dough to stick) by using the tighest weave dishtowels I have-- the tighter the weave the less likely the dough is going to get into the weave and stick; and generously coating the surface of the towel with a 50/50 of coarse yellow corn meal and flour. I use 1/3 to 1/2 cup of this mixture--perhaps over kill but flour is cheap and it works.Also, press the four/meal mixture into the fabric, thus filling the gaps in the weave with flour, preventing the dough from getting into those gaps and sticking.

Yummy!.Oh, and I used an air bake (insulated) sheet for mine, too.(It was about 1 1/3 cups of liquid.) I also ground my own flour, using Sonora White wheat, as during this Coronavirus time even here in North Dakota where loads of wheat is grown, it’s a little challenging to find flour, especially organic flour, to purchase.

Can’t wait to try my first bite!.I took it down to 250g of sugar/loaf and it was great.I’ve made this, double batches, three times in 2 weeks.

Chill.I have this rising now in 84F degree room.You might get an odd-looking loaf if you try this; baking soda-leavened breads are meant to be baked immediately.

That’s so great! Sounds like you found a new favorite!.That worked great too, and maybe the roasting added a depth of flavour (??).Can this be doubled or tripled?I have lots of family coming and would like to make more than one loaf at a time.

didn’t have cloves and didn’t miss them.i left out the cinnamon sugar topping and it is still a bit too sweet but delish.should have made it in my small loaf pans to be able to eat less at a time and easily freeze most.

I've tried 70% wholewheat and 30% white and that worked well. .I copied this from another comment, because you obviously didn’t take time to read the thread:For the record Jim Lacey’s recipe uses:1/4 teaspoon of yeast not 1/21 1/4 teaspoon of salt and not 1 1/21 3/8 cup of water and not 1 1/2.I again raise the question about the le Cruset dutch oven shown in the NYT picture.It appears to be one with a resin handle, which per the instruction is limited to 200 deg.C/390 deg.F.This recipe needs 450-550 deg.F temperatures to work as far as I can tell.

Yes, my results were similar to verminiusrex's above.I followed the printed recipe (not the video), but I did use my banneton for the final rise.I pass all recipes that hit your eyeballs through this very practical and very important filter.

It is perfect.I made this once as a loaf, and now I’m making it as muffins so we can more easily share the yumminess with neighbors.Deb, is there a mistake in the cinnamon sugar instructions for muffins?It reads: “perhaps make 1 1/2 tablespoons sugar and 1/2 teaspoons of cinnamon worth.”If the ratio stays the same as the loaf, I think it should be 1 1/2 teaspoons of cinnamon, right?.You could have a job at Auntie Anne’s in your future, LOL!.

This is the recipe that I’ve been thinking about trying.recognizing what is, really, pure genius.I have doubled the recipe, split the dough into two after the first rise, and then proofed and baked the two in separate pots at the same time.
